The rest of yesterday
It’s still 65 degrees and sunny here! Everyone’s freaking out because there’s no snow in Tahoe yet and no rain on the forecast, but I’m kinda enjoying it. It’ll snow eventually, so might as well enjoy the sunshine while we can, right?
Met a friend for lunch. We sat outside.
I was STARVING by the time lunchtime rolled around. Guess yogurt bowls don’t hold me over very well.
Ate the Chipolte Chicken Salad, which was grilled chicken, black beans, avocado, corn, etc. Goog thing I got the dressing on the side because it was gross and I didn’t use it. Not the best pic….
Snack: Was hungry a few hours later (the salad was big, so not sure why!) and I had some walnuts/almonds/dried dates mix (from the trail mix bar at Whole Foods) and a clementime. Yum.

30 minute elliptical that left me sweaty and feeling good.
Dinner was brown rice, black beans, and purple cabbage sprinkled with nutritional yeast. The frozen brown rice from Trader Joe’s is GENIUS! It takes a second to heat up so you always have organic brown rice ready to eat. I’m in love with it and it comes in so handy on nights like this when I don’t feel like being patient.
Wondering what that purple juice in the cup is? (Well, it’s not a very good photo so maybe you can’t even tell, but….) It’s from the little water I put in the pan to steam the cabbage! After I cooked the caggabe, I always pour the leftover water into my cup. Full of all the cabbage vitamins! It tastes pretty good too. Try it! (Steaming’s better to keep the vitamins inside the veggies, but I usually use a little water). It’s a sneaky way to get extra nutrients.
I ended up eating an apple for dessert too. And then doing a billion errands.
Still figuring out how often I want to post and what I want to post, so bear with me. More exciting posts than just my daily meals ahead!
