Eating My Veggies: WIAW # 9

To end the month of February, this week’s What I Ate Wednesday post is all about VEGGIES! I’ve been making an extra effort to include even more fresh veggies as the majority of what I’m eating lately. Surprisingly, I went 5 days last week without much meat or dairy.  No, I’m not going vegan, but yes, all the veggies made me feel great!

So here you go, a day in the life of my veggie-filled plates:

Breakfast: Green smoothie, COFFEE with almond milk, and a blueberry oatmeal muffin. The muffins were a great addition to my usual breakfast and kept me full for longer.

Lunch: Broccoli, leftover brussel sprouts, and lentils. This worked well to bring to work and I just heated it up a bit before I ate it. It was super filling.

Snack: Carrot juice and an apple. Wondering about the carrot juice? I thought it was blah….frankly, it tasted like carrots and they are better to chew than sip.

Dinner: Back to my beloved Whole Foods. I was in a rush again tonight and had to grab dinner before an event. It’s become an expensive habit lately, but oh well. This wasn’t my usual Whole Foods so the salad bar had different choices. I chose a zucchini slaw thing and some tofu with a yummy peanut sauce (which became sorta a salad dressing). Yum!

Nighttime Snack: I ate a bowl of raw oats with almond milk and a spoonful of peanut butter. No picture. whoops!

So, how about you: Do you feel noticeable better when you eat more veggies?

I made dinner before I ate breakfast

I woke up with an awful crink in my neck.  It was shooting all down my left side and into my shoulder all day long. Ouch!  I must have slept funny.

The morning was kinda crazy.  I woke up at 6:30, went to the gym for 45 minutes, and then had a billion things to do at home before leaving for work, including food-packing.  I didn’t make it.  I was totally late to work.  Happens sometimes (and not a big deal at my office).

Breakfast:  After being so hungry the day before, I wanted something a little more fulfilling this morning.  So, I made an interesting scramble using these ingredients:
Mini sweet potato, swiss chard, 1 egg + 1 egg white, tiny drizzle of aminos, and dash of salt.

Mixed it altogether.

It's in a pot. Why? I have no idea. It worked, but this should have been made in a pan. I blame that I made it pre-coffee.

And voila.  Tasted really good and kept me full all the way through lunch.

I knew I had a busy day and wouldn’t be home until 9pm, so this morning, I had to pack both lunch and dinner to take with me.  It’s a little weird making your dinner before you’ve eaten breakfast, but some days are like that.  It def made me feel more organized than usual (always a good thing!)

Lunch and Snacks:  I made a really yummy salad with kale, chicken, avocado, orange pepper, flax, cilantro, balsamic vinegar (and i can’t remember what else!) and packed it to-go.  I also brought a few snacks- apple, orange, and banana (eaten with globs of sunflower butter).  It was totally tasty- def a win.

Dinner:   After work, I had a Board meeting.  They’re only every 6 weeks or so, but they start at 6:30 and between leaving work and fighting traffic, I knew there was no way I could grab something to eat on the way…..and didn’t want to be starving through the meeting if I waited until I got home at 8:30/9.

So, I packed a sandwich.  Udi’s bread, chicken (the other half of the breast from my salad), vegan rice cheese (surprisingly decent), rainbow chard, and yellow mustard.

It was easy and really good.  I ate half in the car and half when I got to my meeting.

Probs not a good idea to drive, eat, and take photos all at the same time....

It didn’t stay together unfortunately and everything was falling out of the bread.  Tips on avoiding that?  Are my sandwiches just too full?

So my pre-packing all 3 meals in 20 minutes or less was a success (Yay!), but it left my kitchen a MESS.

It happens.  I cleaned up.  Went to work with my hair wet.  And it was all good.

QUESTION:  Do you always do your breakfast dishes right away or do you leave them for later/when you get home from work?  I’m 50-50…sometimes I leave them, sometimes I do them, but I always feel better if they’re done in the morning.  I hate coming home and seeing them at night!  If you pack your lunch, do you make it in the night before or in the mornings?  I used to do it at night, but now that never happens, I always do it in the mornings (despite that it makes me late and feeling rushed).
