Blogger Wknd and Friday Things

The week got away from me. somehow it’s friday and my to-do list is crazy long. I’ll spare you the details (you’re very welcome) and make this post a short and sweet “hello.”
I have no idea what is up with the spacing in this post— WordPress is driving me crazy today, so I’m sorry it’s all bunched together…it won’t fix….
some happenings……
1) I made the best recipe for a 25 minute start-to-finish chile polenta pie on Tuesday night…..but I didn’t start cooking until it was dark and the pictures came out terrible. What’s a blogger to do? Still share with you? Okay, no prob, you knew I was going to do that anyways… don’t judge!)
Here’s the Clif Notes version:
– Only 4 ingredients…all from TJs
Slice the polenta and put a layer on the bottom of a 8×8 pan. In a bowl, combine the chile and corn salsa. Put on top of polenta, sprinkle cheese on top, add another layer on top, then add more cheese! Bake on 350 for 20 minutes.
The result is a cheesy polenta-y pie….so fast, easy and makes delish leftovers. I’m all about fast and easy these days.
2) The Foodbuzz/Daily Buzz Festival is this weekend! I’m stoked. There’s a cocktail party, farmers market scavenger hunt, food taste pavillion and a gala dinner. I’ve never been to a blogger conference….and actually, I’ve never really been around other bloggers, so it will be a new experience! Truthfully, I have no idea what to expect and I am admittedly a little nervous because I don’t know anyone, but I’m sure it’ll be great. Anyone going???? Come hang out with me!
Tonight after the cocktail party thng, I’m running over to a bookstore to see Jenna (Eat Live Run) do a book reading! It’s unrelated to the conference and just happened to be on the same night, but I didn’t want to miss it. Love her blog and excited to see her in person!
I’m bringing my mom….we haven’t had a girls night in forever and she said she was interested in coming (though I don’t think she reads any blogs…but we have a tradition of going to book events together- she’s a writer) and then the DailyBuzz people are nice enough to give us $50 CASH to spend at a restaurant (they gave us a list of 50 restaurants to choose from) tonight, so she and I are going to dinner at a spot I’ve been really wanting to try.
Saturday night there’s a dinner (that I hear has amazing food)….but it’s also the night my best friend’s mom is hosting “surprise” (well supposed to be a surprise, but she found out about it weeks ago) birthday party for her that night. They both start at 7pm, but I’m going to attempt to go to both. Fingers crossed it works out.
3) In Ironman world, Jared’s triple brick is tomorrow………YIKES.
And I should probably end here because I’m sure that after a weekend of food and photo-taking, I’ll have a million things to blog about this weekend!
