Sunny Day: WIAW #40
Hey and happy hump day! I worked from home today and oh my goodness, it was a gorgeous day! It’s the time of year when we have less fog and I feel so lucky to live in SF.
btw- I couldn’t even watch the prez debate. I’ve already made up my mind candidate-wise and it was just too nerve-wracking knowing how much was riding on the debate. AHHH. I watched the post-debate talk though, of course, and so I probably saw the highlights anyways. While the debate was going on, I watched Real Housewives while doing 5 miles on the treadmill…..so not as educational! ha. Did you watch?
Okay, on to WIAW….
As I mentioned, I worked from home today (writing this on Tuesday night). It’s always so nice to have a more relaxing breakfast and lunch when I work from home.
Breakfast: Coffee with almond milk (x2), a peach (the farmers market still has them! yay for summer fruit), and a hardboiled egg. An egg at breakfast has given me so much more staying power lately than my normal smoothie.
Lunch: I had to take my car in for a recall (something about the headlights) and ate lunch after I got home. I put together a big salad– Spinach, peppers, tomato, apple, and chicken (it’s hidden underneath the spinach) drizzled with Annie’s organic basalmic dressing- my newest obsession.
Snack #1: A rice cracker with blackberry jam. Yum.
Snack #2: Dandyblend (I finished my samples and ordered some– really like it) and a banana.
Dinner: Chicken stir-fry with just about every vegetable I could find in my fridge– red pepper, yellow pepper, spinach, carrots, peas, and sweet potato. I used a stir fry sauce from TJs that was really good and poured it all over brown rice.
And of course, I ended my day with a few bites of that blondie bar mix that I finally made over the weekend. YUM.

October 16, 2012 at 10:05 pm (245 days ago)Such healthy eats, Rebecca! I’m a huge fan of apple cinnamon rice cakes with a bit of peanut butter or almond butter on ‘em. Now I’ll have to try jam! That salad looks delish. I love a good salad but I’m the worst at making them for myself. I always get the leaf to dressing ratio off, and the veggies seem to clash with the dressing…psh. I gotta leave it to the professionals!

They never really answer the actual question and I didn’t care for last night’s format. I will probably climb stairs again today for my workout. Yummy looking stir-fry btw!

I really do make a seasonal food switch and then find I don’t want to eat non-seasonal fruits. There was a big fruit tray at a meeting I was at yesterday and I just had no interest in the strawberries, pineapple, etc.

I’m missing watermelon, but we are going through 5-6 lbs of apples a week.

That blondie bar mix sounds tasty too. The perfect way to end the day!

I’m with you, I know who I am voting for so I don’t want to get into the nitty gritty with the debates. I have a recall on my car too, it’s the second recall since I have owned it. The power windows could ignite…super cool.
My exercise was a 6mile run and 4mile walk yesterday, today it will be a spin class! Yay for SF weather!

I miss summer fruits but have been really enjoying all different kinds of squash lately! I only wish I’d frozen more of my zucchini bread for later rather than eating it within a week or two of baking
Favorite thing to throw in stir fry: Quorn (a soy-free veggie ‘meat’) chik’n chunks, orange and red bell peppers, and sugar snap peas. Yum!

I actually watched part of the debate but had to turn it off after awhile. I’m tired of it already, but that may be because I live in a swing state, where we are peppered with ads, commercials, and phone calls. I ended up switching to the Real Housewives. Ha. Much more entertaining, although maybe not educational.
