Watermelon & Grilled Peaches: WIAW #31
And suddenly, it’s Wednesday again! This week, I’m all about WATERMELON. I bought a giant one at the store for only $2.98…score! Watermelon is one of my favorite ”Summer Staples.” I also found a new thing to add to my list recently- Grilled Peaches– I ate them for the first time finally and holy cow– they are the best thing ever.
Okay, now on to WIAW….my food from Monday. I took the day off work to finish unpacking, run errands, shop for groceries, etc. It’s always so nice to have a weekday off work!
BREAKFAST– The usual again. A greek yogurt and banana. There was a cup of coffee in there too and a scoop of pb added to the yogurt that I never photographed.
I ran around all morning and didn’t get home until almost 2. I was starved!
LUNCH: Watermelon (summer staple yum!), and a rice cracker “sandwich” with avocado, a scrambled egg, a drizzle of olive oil and salt. I ended up eating another rice cracker/egg/avodao “sandwich” too because I was still hungry after the first. SO FULL after this.
DINNER was really good! I used a cookbook that’s been sitting on the shelf collectin gdust for way too long. I made two recipes from it— Pork chop (I never eat pork! but was good to eat something different) with a soy sauce and maple syrup marinade. Grileld the meat and peaches (also in marinade) on the george forman. And “Monster Mash”- mashed sweet potato and cauliflower, mixed with yogurt, nutmeg, garlic, a little broth, etc. It looked like orange baby food- ha! I followed the recipe, but it wasn’t very good– the flavors just weren’t working together. Next time, I’ll keep to my usual recipe. I added some leftover roasted broccoli and cauliflower on the side for some green.
After dinner, I went to an 8:30pm yoga class. It was so hard! Kicked my butt, but felt amazing. Then came home and was glued to the couch watching the Olympics until way, way too late.

– Do you ever grill fruit? I’ve grilled pineapples before too, they were great!
– How do you like your eggs? Scrambled, poached, hardboiled, etc. I usually go for scrambled….unless I’m at a restaurant and then I usually get them poached.
– Score any deals at the grocery store lately?

August 7, 2012 at 10:34 pm (290 days ago)Grilled peaches are incredible, brilliant on pancakes. I like baking apples stuffed with raisins, pecans and a little brown sugar…topped with some granola even!!! Grilled or baked pears are also pretty good!

I love have yogurt and a banana for breakfast. I always add some PB and honey.

Back in my working days, I loved the novelty of a weekday off. Now that I’m home all the time, weekends are my novel time.

August 10, 2012 at 5:29 am (288 days ago)I have never grilled fruit before, but maybe that’s because I prefer it cold and/or frozen. Especially raspberries: Much better frozen than fresh in my opinion. Maybe though… I might have had a sandwich or pizza with grilled pineapple. Hm. That actually sounds kind of good now
