Ice Cream Day and a Frittata
Did you know that yesterday was National Ice Cream Day? I didn’t. But I totally lucked out. After a few full hours running errands and shopping for things (Target, Container Store, etc) an ice cream craving hit hard. And lucky for us, the closest spot was Fenton’s!
Fenton’s is a legend in the Bay Area. It’s family owned since 1894, all the ice cream is made on-site, AND unbelievably, it’s 5 days from milking to ice cream making to you eating it. Doesn’t get any fresher than that!
The line was at least 25 people deep. They said it’s actually normal for a Sunday and the Nat’l Ice Cream Day crowds hadn’t hit yet.
Sundaes were $1.88- nice deal! Had a hard time choosing
But ended up with a cookies and cream sundae. It was massive. And delicious.
It made the drive back to the City MUCH better…who wouldn’t be in a great mood after ice cream
And all the sugar gave us some energy for cooking….
On Sunday nights, we’ve been meal prepping a bit. We try to always make lunches for the week….but last night we made breakfast as well- a massive veggie-bacon-potato-egg fritatta that will last at least four days. We’ll see how long it keeps, but I think it’ll work fine to just zap it in the microwave for a few seconds. Perfect for my Ironman who doesn’t have time between morning workouts and getting to work on time to make an omlet everyday!
In case you want to try it, here’s my recipe:
Massive Veggie Fritatta
Mix 8 eggs in a bowl, add some Parmesan cheese and salt and pepper.
Dice veggies and saute in a pan. Ours was a rainbow mix- peppers, cilantro, spinach, and potatoes.
Add the egg mixture to the pan plus a few pieces of bacon (cut into small pieces). Let cook on medium high heat for 3-4 minutes until the sides begin to set.
Stick it in the oven under Broil for 4-5 minutes until the top begins to brown
And just like that, you have a frittata! Tons of veggies and yumminess to start your day!

That frittata looks so yummy. I’ve never made a frittata before, so illl have to give it a try!
