WIAW: Weekday Eats at Home
Hey all! Let’s get right to it…..
What I Ate Wednesday, hosted by the fabulous Jenn
I photographed my eats from Monday. I was lucky enough to have the day half-off (off at 11am to make up for a big work event we had on Saturday). It was so nice to have a day of weekday eats at home!
BREAKFAST was bright at early at 6:30am. Green Smoothie (spinach, banana, blueberries) and a juicy orange. Plus a cup of green tea.
I had an 8am dentist appointment…..they numbed me so when I left an hour later, I could barely move my mouth, much less even drink water…..but I went right to a 9:30 am “networking breakfast” event…..It was so embarrassing! I was so numb that I was slurring my words and couldn’t say certain things. I’m pretty sure everyone I met thinks I was “the girl with the speech impediment” haha. Oh well. By noon the numbness had died down thankfully!
By 12:30, I was home (yay!) and ready for LUNCH. I made my favorite lately. Chicken (grilled with bbq sauce) and a sliced tomato inside a Collard Green. It’s like a wrap!
I love these because they’re not messy to eat, they’re filling, and taste great.
SNACKS
It’s SO much nicer to snack at home rather than at work because I can choose what I actually feel like rather than just what I happened to stick in my bag when I was half-asleep in the morning.
Around 2pm, I had a mini soy ice cream sandwich from TJs. Have you tried these? So good!
And then a little while later (4-ish?), I had some veggies with hummus. Is it just me or does anyone else like the whole carrots so much better than the baby ones?
And then when DINNER rolled around a little after 7, I had leftover Miso Quinoa salad from the night before. I made Emily (Daily Garnish)’s recipe (but changed some of the veggies) and WOW, it was soooo good, I think I’ll be making it every few days! I’m now obsessed with raw miso…but that’s a story for another day.
And because what’s life without more dessert?, I had a small piece of my Peanut Butter Krispie Bar– still taste good 5 days later!
Ok so questions for you!
– Regular carrots or Baby Carrots– can you taste the difference?
– Favorite Hummus Brand?
– What do you like to add to your quinoa?
– Any funny dentist and numbing stories?

June 13, 2012 at 12:05 pm (343 days ago)I will eat most anything with my quinoa, and I usually make my own hummus. I can’t really make a decision on the carrots, we always use baby carrots to eat raw and whole carrots for shredding/cooking.
As for the numbing question…don’t have one of those, but I did have an orthodontic appliance in my mouth about 2 years ago that made me have a lisp for a month or so until I was use to talking with it in. The hilarious part, I am a speech therapist!

June 13, 2012 at 12:19 pm (343 days ago)Yes Yes!! I eat whole carrots!! My husband hates them. He complains that they are too “Carroty,” and that he feels like a rabbit. Really?
Anyway, ooh I love the collar green wrap idea!
I am loving quinoa lately too! It’s so versatile!! I basically throw anything and everything I find in the fridge and voila! a scrumptious bowl of yummies. I love the addition of beets =)

June 13, 2012 at 4:44 pm (343 days ago)I seem to be one of the few people who don’t actually like carrots. But If I had to choose, I would choose the regular ones, I can definitely taste a difference! Your breakfast looks delicious, and the photography is beautifuL

June 13, 2012 at 5:28 pm (343 days ago)Love lettuce wraps! Soy ice cream sandwich? No way! Looks yummy. I eat both whole and baby carrots. Usually baby for snacking and whole for cooking/salads. I cook with quinoa often. My 2 favorites right now are a breakfast quinoa with almond milk and fruit and quinoa taco salad. Yum! My favorite hummus is from Whole Foods.

glad to know those ice cream sammies are good – I am always skeptical of soy ice cream

I make my own hummus–white or pinto beans, fresh lemon juice, just a smidge of tahini, splash of vinegar (cider or balsamic), fresh herbs (when available in my courtyard!) or seasoning. Yum! And yes – dentist… Threw up on myself and the dentist when I had my first fluoride treatment as a kid. To this day I cringe when I think of orange flavored fluoride
